St Patrick’s Day is upon us again, and to celebrate we thought we would share an extra special treat with you.
Here’s the Guinness Cake recipe from our StrEAT Alternatives cookbook – a proper Ireland inspired treat.
For the cake:
170g plain flour
2 medium eggs, beaten
290g dark soft brown sugar
60g cocoa powder
1 1/4 teaspoons baking powder
For the Icing:
2 tablespoons Guinness
115g icing sugar, sifted
115 dark cooking chocolate
1 pack ready-made white icing
Preheat oven to 180C (160C fan)/350F/Gas Mark 4.
Grease two non-stick 20cm baking tins.
Mix together butter and sugar then gradually beat in the eggs.
In a second bowl sift the flour and baking powder.
In a third bowl mix together the cocoa powder and Guinness.
Gradually add all the mixtures together and fold in until completely mixed.
Separate between the two tins and bake for 30-35 mins.
Leave to cool before turning onto wire rack.
Melt chocolate then mix in Guinness.
Beat in butter, leave to cool for five minutes, then beat in the icing sugar.
Use some of the mixture to sandwich together the two layers, and use the rest for the top and sides.
Cover the top with white icing and leave to set.
Wit the icing for this recipe your cake should end up looking like Guinness (dark sides and white top).
